Hugo and Angelica Chavez didn't come from the restaurant world. What they came from was a deep love of real Mexican food — the kind that takes all day to make and tastes like it.
When Hugo relocated to El Paso in early 2022, he brought with him the spices and methods of Jalisco: dried chilis, garlic, cloves, and the patience to slow-cook birria until it becomes something else entirely. They bought a trailer, customized it themselves, and launched La Bomba that May.
No culinary school. No investors. Just the 915, a conviction that El Paso deserved the real thing, and a name that says exactly what their food does — it hits like a bomb.
